Vegan Walnut Shakshuka

Ingredients

  • 1 red onion
  • 200 g chopped tomatoes
  • 2 x handfuls of walnuts 60g
  • 3 x cloves of garlic
  • 1/2 tsp cumin
  • 1 tsp chilli flakes
  • 2 tsp smoked paprika
  • Drizzle of olive oil
  • Salt
  • Pepper
  • 320 g Ackee
  • Micro green sprinkle
  • 2 slices of bread toasted

Instructions

  • Drizzle the olive oil in a warm pan
  • Add in the finely chopped garlic, shallots and walnuts and sauté
  • Season with cumin, smoked paprika, chilli flakes, salt and pepper
  • Toss the ingredients in the seasoning
  • Add in the chopped tomatoes and simmer to thicken
  • Add the ackee on top evenly
  • Bake in the oven for 15 minutes on 180c
  • Serve with Chopped walnuts, Sliced avocado, Micro greens and toasted bread
