Walnut & Pepper Pesto Pasta by Nic's Nutrition

For the Pesto:

  • 350 g 1 jar roasted red peppers, finely chopped
  • 100 g California Walnuts
  • 1 garlic clove or 1 tsp lazy garlic, crushed
  • large pack basil keep a few leaves to serve
  • 4 tbsp extra virgin olive oil

To Serve:

  • Your favourite pasta or crusty bread
  • Your favourite cheese e.g mascarpone ricotta or mozzarella


  • Simply add all of the pesto ingredients to your blender and blend until you have a smooth paste.
  • Serve with your favourite cooked pasta or crusty bread and cheese.
  • Season with salt & pepper to taste.
