For the Pesto:

1 jar roasted red peppers, finely chopped

garlic clove
or 1 tsp lazy garlic, crushed
large pack basil
keep a few leaves to serve

tbsp
extra virgin olive oil
To Serve:
Your favourite pasta or crusty bread
Your favourite cheese e.g mascarpone
ricotta or mozzarella
Instructions
Simply add all of the pesto ingredients to your blender and blend until you have a smooth paste.
Serve with your favourite cooked pasta or crusty bread and cheese.
Season with salt & pepper to taste.
