Salmon with Braised Ginger & California Walnut Cabbage

Ingredients
500gRed cabbagefinely shredded
1smallOniondiced
25gDark brown soft sugar
1Red eating applecored and grated
75mlCider vinegar
125mlRed wine
1tspGround ginger
25gFresh gingergrated
75gCalifornia Walnutsroughly chopped
15gKnob butter
1tbspOil
4Salmon fillets
Instructions
Place the cabbage, onion, sugar, apple, vinegar, wine, both gingers and Walnuts in a large saucepan, season and bring to a simmer, cover and cook on a low heat for 1 hour, stirring occasionally until tender and most of the liquid has evaporated, stir in the butter.
Meanwhile, heat the oil in a large frying pan and fry the salmon fillets skin side down for 4-5 minutes, turn and cook for a further 4-5 minutes until golden and just cooked throughout.
Serve the salmon with the braised ginger cabbage and some cooked broccoli.
