Walnut Cauliflower Cheese

Ingredients
- 2 small or 1 large head of cauliflower cut into florets
For the sauce
- 570 ml dairy free milk
- 100 g plain flour
- 1 teaspoon of salt
- Pinch of pepper
- 1 teaspoon of English mustard
- 1 teaspoon of nutmeg
- 1 tablespoon of nutritional yeast
- 100 g California Walnuts ground
For the cheese topping
- 200 g dairy free cheese grated
- 2 slices of bread blitz into breadcrumbs
- 100 g California Walnuts ground
- Handful of chopped California Walnuts
Instructions
- Bring a large saucepan of water to the boil and add the cauliflower florets. Boil for 15 minutes before draining and leaving to one side.
- Preheat oven to 180c.
- In a large saucepan over a medium heat add all of the ingredients for the sauce and combine until the sauce thickens.
- Add the cauliflower to the sauce and coat evenly before pouring into a large ovenproof dish.
- Combine the grated cheese, breadcrumbs and ground walnuts together before sprinkling on top of the cauliflower.
- Finish by topping with a handful of chopped walnuts and bake in the oven for 45-50 minutes.
