Walnut Cauliflower Cheese

  • 2 small or 1 large head of cauliflower cut into florets

For the sauce

  • 570 ml dairy free milk
  • 100 g plain flour
  • 1 teaspoon of salt
  • Pinch of pepper
  • 1 teaspoon of English mustard
  • 1 teaspoon of nutmeg
  • 1 tablespoon of nutritional yeast
  • 100 g California Walnuts ground

For the cheese topping

  • 200 g dairy free cheese grated
  • 2 slices of bread blitz into breadcrumbs
  • 100 g California Walnuts ground
  • Handful of chopped California Walnuts


  • Bring a large saucepan of water to the boil and add the cauliflower florets. Boil for 15 minutes before draining and leaving to one side.
  • Preheat oven to 180c.
  • In a large saucepan over a medium heat add all of the ingredients for the sauce and combine until the sauce thickens.
  • Add the cauliflower to the sauce and coat evenly before pouring into a large ovenproof dish.
  • Combine the grated cheese, breadcrumbs and ground walnuts together before sprinkling on top of the cauliflower.
  • Finish by topping with a handful of chopped walnuts and bake in the oven for 45-50 minutes.
