Crunchy Grain, Fruit & California Walnut Salad

Ingredients

  • 250 g pouch mixed grains
  • 1 large carrot grated
  • 1 apple diced
  • 40 g sultanas
  • 75 g California Walnuts chopped
  • Juice ½ lemon
  • tbsp extra virgin olive oil
  • ½ x 25g pack parsley roughly chopped

Instructions

  • Heat the mixed grain pouch according to pack instructions an then transfer to a large bowl. Mix in the carrot, apple, sultanas and Walnuts.
  • In a small bowl, whisk together the lemon juice and oil, season well then toss into the salad with the parsley.
