Salmon with Braised Ginger & California Walnut Cabbage

Ingredients

  • 500 g Red cabbage finely shredded
  • 1 small Onion diced
  • 25 g Dark brown soft sugar
  • 1 Red eating apple cored and grated
  • 75 ml Cider vinegar
  • 125 ml Red wine
  • 1 tsp Ground ginger
  • 25 g Fresh ginger grated
  • 75 g California Walnuts roughly chopped
  • 15 g Knob butter
  • 1 tbsp Oil
  • 4 Salmon fillets

Instructions

  • Place the cabbage, onion, sugar, apple, vinegar, wine, both gingers and Walnuts in a large saucepan, season and bring to a simmer, cover and cook on a low heat for 1 hour, stirring occasionally until tender and most of the liquid has evaporated, stir in the butter.
  • Meanwhile, heat the oil in a large frying pan and fry the salmon fillets skin side down for 4-5 minutes, turn and cook for a further 4-5 minutes until golden and just cooked throughout.
  • Serve the salmon with the braised ginger cabbage and some cooked broccoli.
